Tortilla Egg Cups

Egg baked in a Tortilla with bell peppers (or any veggies you prefer)! 

To make, press tortillas in a muffin cup. 

Fill with whisked eggs and peppers. 

Bake at 350 until eggs are cooked through. 


 

For the adults or the older kiddos, you can top with a little bit of pico or fresh salsa!! 

21 Day Fix Exchange:  1 yellow, 1/2 red (1 egg or 4 egg whites per cup)
